Myrtle Allen

Ballymaloe House in County Cork became a kitchen laboratory because Myrtle Allen refused to import flavour when her own land produced it. She cooked for others only after feeding her children, measuring success in their return for seconds rather than in praise from strangers. Ivan grew the ingredients and Myrtle translated them into dishes, turning a private family table into a public school for seasonal eating.
