One chamber stood in west Clare, its door facing east to catch the Atlantic wind. Inside a stone spindle turned a wooden shaft, lifting steel jaws that bit through wheat and barley. The mill keeper listened for rhythm rather than watched dials, judging when the grain had become flour by the sound of the stones singing. When the bread came out white and warm, the whole valley smelled of breakfast before sunrise.
