Crathes Castle Policies holds Post Medieval ice-houses, structures built between 1561 and 1899 for storing ice. They sit within a forty-metre square in Aberdeenshire, serving the castle's need to preserve food through summer heat. The policies mark the boundary of that domain, a field edge drawn around a practical invention. Without the ice-houses the castle would have wasted good meat and fish; with them, Crathes kept its table supplied and its people healthy.
