Crathes Castle Policies holds Post Medieval ice-houses built between 1561 and 1899. They stand inside the castle estate in Aberdeenshire, waiting for people who know how to read quiet stone. The chambers may have stored river ice for kitchen tables and feast days, turning winter into a jar that summer could open.

Crathes Castle Policies were developed by the Gordon family, who held Crathes Castle from the 16th century onwards. The policies are historically important as they reflect the layout and management of a Highland estate during the early modern period.
