Powis Castle kept its own dairy in the 18th Century, a small stone kitchen where cream separated from milk and butter took shape under human hands. The castle owns the land, but the dairy belongs to every person who has ever watched fat rise through patience. That much is clear. What is missing is the sound of the room, the smell of warm cream, and the name of the person who stirred it.
