Crathes Castle Policies holds Post Medieval ice-houses, structures built between 1561 and 1899 to capture winter cold for summer use. The castle estates needed clean ice to preserve food long before electric fridges arrived, so people cut blocks from frozen water and stacked them inside stone chambers. Those chambers still stand near Banchory Ternan, waiting for curious visitors who can find the entrance.
