Craigmillar Castle Dairy stood on Castle Road from 1780 to 1820, supplying fresh milk and butter to the castle households above. Its stone walls still smell of cream and wood smoke, while shadowy cows pace the grass in dreams. The dairy served kings and keepers alike, making royal tables taste the clean hunger of the hill.
